Our friend and revered holistic-nutrition expert Kelly Leveque has the perfect Fourth of July recipe. Her take on the classic parfait is not only tastier, but it’s also healthier. In her own words, she describes it as “a dairy-free, gluten-free, protein-rich and high fiber alternative to your traditional yogurt parfait. Preheat oven to 220 degrees.
Put all four cups of nuts in the food processor and pulse to create small chunks.
In a large bowl mix coconut oil, honey, coconut flakes, seeds and nut chunks.
Transfer mix to a baking tray.
Bake for 20-30 minutes, mixing and flipping every 10-15 minutes.
Let mixture cool and store in an airtight container.
Layer granola, yogurt. and berries.
