This week, we are sharing a delicious, summer-ready, chilled soup for our readers to enjoy! The recipe is from one of our favorite cookbooks, “Soup for Syria: Recipes to Celebrate our Shared Humanity,” which features recipes from many celebrity chefs such as Anthony Bourdain. All recipes were collected and photographed by Barbara Abdeni Massaad. So, if you’re interested in a delicious and refreshing recipe, read below for Patrick Herbeaux’s Melon Gazpacho (available on pg. 124).
Combine the melon, lemon juice, and oil in a blender or food processor.
Blend until smooth.
Add salt and pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving.
Ladle into bowls and garnish with chopped bell pepper and zucchini.
Sprinkle lightly with cayenne or paprika.
